So I am basically looking for a good old turn-based RPG in the sense of the older Final Fantasy titles. I really miss the days of mowing down your foes with epic summonable beasts (Bahamut, anyone?) or giant magic attacks that fill out the entire screen.
Today's RPGs are much more streamlined with less over-the-top actions, which is not entirely my cup of tea (except for the Souls games).

Yeah, kinda lost faith in JRPGs this gen...
I wanted to get Resonance of Fate but somehow never picked it up
I don't know if it's strictly turnbased or more like todays FFs though.....

Well resonance of fate is a PS3 game, i think it's worth a look...

It's 2 years old but that shouldn't be a problem.
Valkyria Cronicles was also one of the few gems on PS3 (the sequell was for the PSP sadly).
It's a turn based SRPG though...
One of my favorite "classic JRPG" series is Dragon Quest you could buy "Journey of the Cursed King" for the PS2 if you still have one... it still rocks and has aged pretty well due to the cell shaded graphics.

If you want what I've got in bold, then i would suggest Grandia. it might be old but the battle system in that hasn't been matched in the 13 years of JRPG since release.
as for giant magic attacks. like always, you start out small with peewee spells but quickly grow into spells that damage every enemy onscreen.
magic system is also leagues ahead of its day. use a spell, get exp on spells element. get 100 exp, lvl up element. 4 basic elements. 8 in total(??) as base four combine to make other elements. spells can be learned mid battle as exp is earned on the fly.
Epic OST also! you might cry!
if you've played Grandia then try Grandia 2.....if you've played both....then i can only point toward Valkyria Chronicles....if played all....then you've played the best JRPG has to offer

Keep an eye out for Ni No Kuni due out next year! Also, White Knight Chronicles II is pretty damn decent. Story is meh, but the MMO-ish gameplay is pretty awesome.

Try the Atelier games. They are turn-based but the attacks may not be over-the-top enough for you. The alchemy system is kinda cool though so if you can endure their cuteness, there is some substance to the games.
Also, there is Hyperdimension Neptunia and it's sequel.
Cross Edge. Talk about owning the enemy. That's what this game is all about. I wish the story was better, but it has some interesting combat. (I also wish the graphics were up to current generation standards, but oh well. Maybe next gen something similar will come out but will actually look pretty good)
There is also Enchanted Arms, which is probably the closest to a traditional FF style Turn-based JRPG the PS3 has right now, which makes me very, very sad.
If you don't mind Action JRPG's, check out Tales of Graces F. It's probably the best JRPG on the PS3 currently.

"Chrono Cross". Always been the best, always will be the best. "Persona 3", "Lunar: Silver Star Story Complete" and "Shadow Hearts: Covenant" are also excellent.
