I absolutely love Dead or Alive. I've played every on religiously since the first one on the PS1 here in the US. Needless to say, I will be getting Dead or Alive 5 day one on the PS3.
It seems that Team Ninja is parting with the anime-esque look presumably to give the impression that the series has grown up and appeal more to the western world. The breast physics are normal, and the fighters have been given more distinctive features.
Here's two videos of the post-alpha gameplay to whet the palatte:

I immensely enjoyed DoA 1 and 2 (never played 3 and 4 being a Microsoftphobic) and will gladly enjoy DoA5

You missed out on a lot between DOA 3 and 4. IMO 3 was better than 4 but DOA5 will be better than both of them.
Here's a video showing a DOA5 tournament that was held a day ago in London...

Here's some new info:
SourceFor a while, Dead or Alive 5 director, Yohei Shimbori, wasn’t sure whether to use a three-point hold system (DOA3) or a four-point hold system (DOA4) for the new game. Going by the little snippets of thoughts he would leave on the Dead or Alive Facebook page, it looked like he was largely in favour of the three-point system.
This week, however, Shimbori announced that, due to fan feedback, Dead or Alive 5 will be using the more advanced four-point hold system after all. “We got a lot of feedback on holds from around the world,” Shimbori writes on Twitter. “The Alpha Demo used 3-point holds: high, mid, low. But the version this time uses 4-point holds: high, mid P, mid K, low.”
“4-point holds work really well for game balance, but I was worried that beginners couldn’t pull off mid kick holds,” he continues. “But all of the feedback we got from players with the Alpha Demo gave me the final nudge to go with 4-point. Of course, we will make it so new players can still have fun with 4-point holds.”
Shimbori says that there are other changes to the game as well, and that he may discuss them after E3.Steam & PlayStation Network: BlacksitePSU | 3DS Friend Code: 1349-4916-2054

DOA4 was better than DOA3....the changes they made to the counter system especially with the mid kicks using forward+free made it harder to counter when it came to mid moves. best change ever because you had to make the correct adjustment if a move either ended with mid kick or mid punch, made the game hugely different.

Well yeah 3 point holds (DOA3) holds make it more accessible to newcomers but 4 point holds (DOA4) makes it more challenging making for more interesting matches. My preference for DOA3 was that it was enjoyable to play with any character, I found myself mastering all of the combatants having an equal amount of enjoyment with both, while on DOA4 I found myself sticking to a main without a need or desire to pick anyone else. One DOA3 when I wanted to see the special ending by beating the game with all the characters, it was no problem, but on DOA4 I had to suffer through playing with characters that didn't really appeal to me (anymore).
I'm not biased in having that opinion as my main/favorite from this day forward is La Mariposa who was introduced in DOA4. I don't play DOA3 anymore but my most memorable DOA moments were had with DOA3.
My main gripe with DOA4 was the ability to hold out of wall stuns. At first I hated it but when I incorporated the knowledge of it into my repertoire, it made me a better DOA player.

Team Ninja decided to go with 4 point holds for DOA5, I'm sure it'll pan out great. They've added an up, up, down, down, down, sidestep move (in addition to the free step, presumably to make Virtua Fighter fans feel more at home with the three VF fighters added) that looks really useful, they've balanced it so that you actually have to time the sidestep with an attack to get it to work. That will make dealing with pesky ninjas.
On a side note, people who main ninjas on DOA get less respect from me than people who don't. I grew tired of having to adopt 100% defensive strategies simply because someone wanted to abuse ninjas and their bullshit.

Hope the game got more customizations than DoA4

I hear the ladies have at least 6 outfits by default. The Japanese collector's edition is shipping with DLC codes for "sexy outfits" for each of the female fighters in addition to that. It would be nice to be able to customize characters à la Soul Calibur and Tekken though.
Team Ninja has removed the high wake up kicks that were introduced in DOA4 in favor of having only low and mid wake up kicks. This setup will give the aggressor a greater edge by taking some of the guesswork off, and grounded opponents must be more careful. I'm glad they're doing this because grounded opponent have an edge somewhat with 3 point wakeup kicks; there was already enough pressure on the attacker in DOA games with ever-present threat of the hold, removing the high wake up kick from the equation gives the aggressor more of an incentive to press the attack, which make for more interesting games.
Bayman now has combo string(s) that end in throws. This is too much of an advantage IMO because there will be too many mixup opportunities if he makes contact on a blocking opponent.

No plans for DLC as Team Ninja thinks it would make fighting games unfair.
Source
Releasing additional characters as downloadable content for fighting games makes the game "unfair", Dead or Alive 5's developer Team Ninja has told VideoGamer, referring to Capcom's strategy of including additional 'downloadable' characters on-disc as not being "the right way to go".
"We don't feel that it's right for fighting games," Team Ninja boss Yosuke Hayashi told VideoGamer when asked for his opinion on on-disc DLC during E3.
"We feel like this is a kind of sport, and you don't change the rules for sports. Everybody plays by the same rules. You don't have a 14-player soccer game versus an 11-player soccer game. That's just not fair.
"It's a similar thing to if certain people have all these characters and others don't. It makes it an unfair game, and we don't think that's the right way to go for fighting games.
"We have no plans to sell characters as downloadable content."
As well as making the game unfair, Hayashi believes that releasing additional characters makes balancing the game even harder, something that's "already very difficult to get right".
"Balance is extremely important, and it's also very hard to do," he continued.
"Even with over 20 characters that's still a real challenge. If we had 50, how much more time would need to balance the game? It gets that much harder to get it right, and it's already very difficult to get right."
Capcom has repeatedly come under fire from consumers for including characters on disc that are later unlocked via premium DLC. Last month, the firm said that it was "re-evaluating" its stance on on-disc DLC.
In the same interview Team Ninja also confirmed to VideoGamer that it is experimenting with next-gen ideas.Steam & PlayStation Network: BlacksitePSU | 3DS Friend Code: 1349-4916-2054

Yes, that's Rig, the new guy. From what I've read he's a resident of Canada, he's apparently suffering from amnesia as he does not remember his real name or where he came from, he runs an oil rig hence his name, his style of fighting is taekwondo, and he's good friends with Bass.
