George Carlin will always be one of my favorites. As mentioned above, Redd Foxx was a damn funny comedian. I also really liked Richard Prior.

Louis C.K. is my favorite living comedian. His show on FX, Louie is amazing. It combines parts of his actual stand up shows with filmed material that's really really good. He has also had an R-rated sitcom called Lucky Louie back in 2006 on HBO, I believe.

I effing love Louis CK, but I do not really like his show all that much. His stand up is much more enjoyable for me.
Another living comedian I put up on that pedestal with Louis is Bill Burr.
Chappelle was great when he was actually doing stuff.
Out of the dead, Carlin obviously. Patrice O'Neal was a good one too.
