There's a really easy way to do this if you're struggling.

Start a match and put a controller on each team.  With one team pass the ball back to the keeper and then have him come out to the edge of the box and turn to face his goal. Grab the second control and bring a player into the box in front of the keeper.

Switch back to the keeper and tap square to chip it up for a pass. Quickly switch controllers and hit shoot, should do a bicycle kick, easy.
