Choose a team with good strikers. Then simply put your good strikers/finishers into defence.
For instance, I chose Liverpool and put Gerrard and Torres both centre backs. Then I simply put it on amateur, and dribbled all the way up the field with Gerrard, and scored easily!
You can just do it with you original defenders, but I found it annoying how you would get all the way up the field with Carragher and he would sky it because he's useless at finishing!
